Did you know you could make other snacks using chickpeas instead of just hummus? Yup! I saw these small, little pouches of chickpea snacks while shopping for groceries the other day. I didn’t pick them up because, well, the quantity seemed small for the price…seems like a “trick” if you ask me. Making homemade chickpea snacks is super easy and affordable, so for today’s #TrickorTreatTuesday theme, I will show you how to make your own chickpea snacks at home.
I used a pressure cooker to cook my dried chickpeas. A pressure cooker is a great appliance to have since it can drastically reduce the cook time of dried beans (it took 45 minutes to cook my peas in the cooker without soaking the peas). I find the flavor of cooked dried beans tastier compared to canned versions. You can also control how much salt is in the product since you have to salt them yourself.
#BeHealthy Tip: Chickpeas (aka garbanzo beans) are part of the legume family. They are high in vitamins and minerals and are a good source of protein and fiber. In fact, just 1 tablespoon of chickpeas can provide 2g of protein and 2 g fiber, thus making them an optimal snack. Chickpeas are high in manganese which is an antioxidant used to produce energy within your body. So adding chickpeas to a healthy diet can improve your mood and give you energy to prevent that afternoon slump!
Always….be healthy, be gorgeous.
Spicy Garlic and Onion Roasted Chickpeas
2 cups cooked chickpeas (or 15-oz canned)
1 Tbsp olive oil
2 tsp onion powder
2 tsp granulated garlic powder
2 tsp red chili powder
1/2 tsp salt or to taste
- Preheat oven to 400OF.
- If using canned chickpeas, rinse and drain chickpeas. Place chickpeas on paper towels and dab to remove as much moisture as possible. If you cooked your chickpeas in a pressure cooker, you can keep them in the refrigerator for one or two days to let them dry out a bit.
- Place foil on baking sheet and spray with cooking spray. Place chickpeas on baking sheet, making sure to not overcrowd them, and place in oven. Bake for 30 minutes, shaking pan every 10 minutes to evenly roast the chickpeas.
- Mix spices together in a bowl. Once the 30 minutes are up, take chickpeas out of the oven and toss in the bowl with spices to evenly coat them. Drizzle olive oil over chickpeas and toss to evenly coat the chickpeas. Place chickpeas back on the baking sheet.
- Heat oven to 350OF and bake for additional 15 minutes, or until chickpeas are slightly brown and crunchy. Chickpeas will become more crunchy when cooled.
- Cool and serve.
